We have advised the Great Scotland Yard Hotel, part of the Unbound Collection by Hyatt, on the opening of its new restaurant 'Ekstedt at The Yard' to be run by Michelin starred Swedish chef Niklas Ekstedt.
Set within the historic 5* hotel which was once the location of the Metropolitan Police, this new restaurant will bring Niklas’ signature blend of wood fired cooking and Nordic cuisine to the UK for the very first time.
'Ekstedt at The Yard' is expected to open in September 2021.
The deal drew on the firm's expertise in advising hotel operators and owners working alongside recognised restaurant experts, bringing their branding and expertise to the hotel's food and beverage services.
Commenting on the transaction, Partner Richard Bursby, said: "We work with owners and operators all over the world on many of the most high-profile hotels, of which the Great Scotland Yard Hotel is one. The new restaurant couldn't be in better hands with Niklas Ekstedt, and we greatly look forward to seeing the opening in September."
